I am always being asked for advice and tips and I love sharing these with you in order to help you grow your business and improve your baking. Here are some of the most commonly asked questions. Why are my cupcake cases are peeling ?

There are a few reasons why this can happen!

Your cupcakes are slightly undercooked. Your room is very humid (moisture can make them peel)
Remove your cupcakes from the baking tray immediately after taking your cupcakes out of the oven. Also stops greasy bottom cupcakes.

Why is my buttercream grainy?

This is down to the brand of icing sugar you are using. In America it’s called confectioners sugar. In some other countries it’s more like raw sugar so will be grainy. I use Tate and Lyle.

Why are my cupcakes domed?

 I have never understood the issue with this but if you want flat top cupcakes then simply turn your oven temperature down and cook for longer.

Can you freeze cupcakes?

Yes just make sure they are completely cold before loading into a freezer bag. Do a single layer and don’t stack too many bags on top of each other.

How long can I freeze my cupcakes for?

I recommend no longer than 3 months. I bake, freeze and use them all that week.

How long does the buttercream last in the fridge?

It will last in the fridge for as long as the expiry date on the pack of butter.

Can I freeze my buttercream?

Yes put it into a container with a lid simply take it out a few hours before needed.

Do I have to have a stand mixer?

No you can use a hand whisk it will just take a bit longer.

 

My buttercream is melting in the piping bag?

This happens when you have hot hands. Simply pop the piping bag in the fridge for a few minutes and run your hands and wrists under cold water. Running cold water on your wrists cools your whole body down.

Why do my roses and other flowers have frilly edges?

This doesn’t matter but if you don’t want frilly edges simply tighten your piping bag. It’s where it’s too loose and you lose control of what is coming out of the nozzle.

How do you box your bouquets, when customers collect or for delivery?

I only box my 7 bouquets and 12 bouquets. All other sizes don’t need to be boxed as they are so heavy they simply sit in the footwell of a car or in the boot.

I don’t know what to charge?

When you first start your business if you’d rather charge less until you’re more comfortable with my prices then make sure you write introductory prices on your posts. Then you can increase your prices as and when you feel more confident. My prices are just a guide, it can alter depending on how affluent the area is in which you live!

Should I offer discount when customers are purchasing multiple bouquets?

Absolutely not, you are not decreasing the quality of your work, so why should you not make as much money! Been confident and firm in your pricing structure.
